Angus Whole Brisket

At Châtel Farms we know what it takes to make the perfect smoked brisket and it starts with a superior raw material.  That’s why we select only briskets that are consistent in size, consistent in fat cover and a thicker than average “flat”.  Whether you’re a competitive smoker or just a backyard enthusiast, you will not be disappointed in our briskets.

Our Brisket is sold individually as a primal cut and is available in 3 different sizes: 8-12lbs, 12-16lbs or 16-20lbs. Our briskets are aged to perfection and then shipped to your door. They are properly packaged to ensure quality and wholesomeness upon arrival at your home.* All of our beef is wet-aged a minimum 14 days. Wet-aging increases tenderness and enhances the beef’s deep, rich flavor. 

We recommend thawing the brisket on the lowest shelf in your refrigerator for 24 hours per 5lb. of meat.

*While our Brisket ships frozen with dry-ice, it is possible that it arrives thawed to your home, especially during the warmer months. We recommend immediately removing the brisket from its shipping container and placing it in your freezer or refrigerator until ready to use. Once thawed and in its original packaging, the brisket can be kept in the fridge for up to 5 days.

What is Wagyu?

At Châtel Farms, our herd consists of Japanese heritage, full-blood Akaushi bulls. Akaushi is a Japanese cattle breed that was imported to the United States in 1994. Since then, their numbers have grown but remain somewhat exclusive and limited in availability. Many in the industry refer to Akaushi as the “Emperor’s Breed,” and it is one of four breeds that fall under the common name of Wagyu. These red-hided cattle are known to produce highly marbled beef with a unique beefy flavor and buttery texture. Wagyu also boasts high levels of the “good fats” like Omega 3 and Omega 6, which results in truly healthy beef.
